You'll need this:
Greens are: dill, parsley and greeen onions.
You can omit pickles and substitute sausage with chicken.
Carrots and potatoes are, obviously, boiled.
Chop it like this:
Mix everything together, this would be the base.
It's supposed to be kept in a fridge and used to make individual portions.
Now here is an amazing twist, you can make TWO different dishes with that!
Add cold water, canned beets, sour cream, salt and vinegar and this would be a cold borsch:
If there are no canned beets, the boiled and grated beets will work as well. You could try to substitute water with kefir. There is even kvass-based variation called "okroshka", but it tastes pretty weird.
Add 50/50 mayo and sour cream, canned peas and salt and this would be an olivier salad:
